This recipe was created by Sherrie Decker's Great-Grandmother Lightly and has become a tradition on Christmas morning. If you're lucky, you might get a taste of it at Decker's Blue Belle Inn B&B and Teahouse in St. Ansgar.

My Great-Grandma Lightly's Cottage Pudding

This recipe is a favorite of our family on Christmas morning.
My Great-Grandma Lightly's Cottage Pudding

1 c. sour cream
2 eggs
1 c. sugar
1 1/2 c. flour
3/4 tsp. soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla

Mix all ingredients well.  Pour into 12 greased muffin cups.  Bake at 350
degrees until muffins are a delicate brown on top and puffed over the edges of the muffin tin like the eaves of a roof on a cottage.  Make sauce while pudding is baking. Spoon warm sauce over warm muffins and serve.

Sauce:
2 c. cold water
2 Tbsp. cornstarch
1 Tbsp. vinegar
1 Tbsp. butter
1 c. sugar
1 tsp. vanilla
dash of salt

Stir all ingredients until boiling to make sauce.
